    Summary: Prepares, serves, and verifies study meals and snacks for human clinical trials while ensuring the integrity of the studies and the safety and well-being of human subjects. Performs duties in accordance with company’s values, policies, and procedures.

    Essential Duties and Responsibilities include the following. Other duties may be assigned at the company’s sole discretion.


    • Understands the objectives of each study and how nutrition and food intake are related to study objectives.
    • Demonstrates understanding of proper food handling for subject safety. Documents refrigerator, freezer, and food temperatures as required.
    • Demonstrates proficiency in documenting on nutrition source documents. Observes and records data related to meals as required by protocol, e.g. start and stop times of meals, caffeine intake, fluid intake, etc. Ensures all data is recorded accurately and completely.
    • Demonstrates proficiency in visually estimating meal intake.
    • Demonstrates proficiency when preparing, verifying, and serving study specific meals, snacks, meal tests, and identical meals.
    • Monitors and maintains the cleanliness of the subject kitchen. Uses time effectively to complete duties on kitchen cleaning log.
    • Anticipates kitchen needs and inventory food supply as needed. Communicates ordering and equipment needs to Lead Nutrition Assistant proactively.
    • Demonstrates proficiency when checking in food deliveries from caterer, online food orders, and other vendors.
    • Flexibility and reliability to work morning, evening, and holiday shifts as needed and as scheduled.
    • Communicates with nursing and CO staff regarding timing and consumption of subject meals as needed.
    • Demonstrates basic understanding of glucose metabolism, T1DM, T2DM, and relationship between medication and food intake.
    • Demonstrates understanding and participates in Continuous Quality Improvement (CQI) process as needed.
    • Attends and completes all required training activities.
    • Complies with ProSciento Standard Operating Procedures (SOPs) and Work Instructions (WIs).

    ☐ NA I Education and Experience:

    Bachelor’s degree obtained or in progress in nutrition/dietetics or food service management preferred. High school diploma or general education degree (GED) with experience and/or equivalent combination of education and experience. Task oriented with strong attention to detail. Excellent customer service skills.


    Certificates and Licenses:

    Current San Diego County Food Handler’s card or Food Safety Manager Certification and/or willingness to obtain upon employment.


    Language Skills:

    Must be proficient in English in both verbal and written skills. Able to communicate effectively to employees and management. Spanish language skills helpful but not required.


    Math Skills:

    Able to add, subtract, multiply, and divide in all units of measure using whole numbers, fractions and decimals. Able to compute using order of operations, ratios, and percent.


    Reasoning Skills:

    Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.


    Computer Skills:

    To perform this job successfully, an individual should have basic knowledge of the current MS Office Word and Excel.

    The employee must occasionally lift and/or move up to 25 pounds. Specific vision abilities required by this job include close, distance and peripheral vision as well as depth perception and the ability to adjust focus. While performing the duties of this job the employee is regularly required to sit, talk and hear. The employee is required to primarily stand throughout shift to complete work duties; frequently use hands to finger, handle, or feel and reach with hands and arms. The employee is occasionally required to walk, stoop, kneel, crouch, or crawl.
